I love a good warming filling meal in the evenings. And it's great to come up with a great new burger with new satisfying whole foods protein sources and high nourishment potential. I love this "accidental" burgers that started with wanting to use up chickpeas, a half a dish of quinoa leftover, and my son's apple he wanted and then didn't want. What resulted is a yum yum yummy dish I will definitely be making again.

Vegan Apple Quinoa Burgers
Boil together:
1 celery stalk, chopped, with leaves
1/2 c quinoa
Also, saute in 2 Tbsp coconut oil
1/3 c onion
2 carrots chopped
2 cloves garlic
add 1 chopped apple towards the end
In a separate bowl:
3T flax seeds soaked in 3T water
1/3 c oat flour
1 can mashed chickpeas
1/4 tsp each of cumin, coriander, salt and pepper, and pinch of cayenne
Patty them up and either bake at 425 for 10 min or saute in a little coconut oil.
Spread hummus and sprouts on top, serve with or without a gluten free bun and enjoy! Makes about a dozen.
