A simple personal sized way to have sandwiches without having to take the tedious time out to make a loaf of specialized bread.
I used to spend whole Saturdays making grain freebread, then painstakingly slicing, and freezing between parchment paper, taking one or 2 put to thaw later as needed.
Now I keep it simple with my single serve sandwich bread.
Even if you aren't following a specialized diet and just want to reduce the amount of congestors in your diet, its delicious for anyone!
The recipe:
1/2 c almond flour
1/4c water
Pinch of salt or garlic salt
1 egg, beaten.
Mix together well. Divide it in half by pouring 2 circles of batter onto a hot oiled griddle. Fry like pancakes, both sides.
Add your favorite tuna salad recipe (I like 1 can tuna,, 1 tsp dill weed,, dash garlic salt,, and 3 TBSP spero brand dairy free cream cheese,, herbed) as a filling to one round, top with the 2nd round.
