Growing Old, Wisdom of the Ages, and Healthy Chocolate Birthday Cupcakes

Like it or not, aging happens.  But typically what comes along with that are negative concepts, when it simply doesn't have to be that way.  We can age gracefully and gratefully, or we can fight it every step of the way.  We can live in such a way in which health is a natural outcome, or we can live as risk takers and pay the possible consequences later.  Either way you slice it age happens.  Our minds get wiser, our cells change, die off, and are reborn.  It is truly a natural part of life, so you see, aging is necessary.  It just doesn't have to come with it the hopelessness that time is passing you by.  Living in the moment allows you to be truly present, creating what the future will be, so you see, you are POWERFUL, not LESS!  The trick is living in such a way in which you are aware of each moment, have gratitude in each moment, be present in each moment so that you are living authentically, not taking a single moment for granted.

Live in such a way that you are creating your human experience, in a way in which you can be happy.  Stop letting excuses, reasons, and justifications prevent you from living a life that you can GRACEFULLY grow with, gratefully being aware that you are given more and more moments to experience it, in years where you have more wisdom and compassion to enjoy it.  

Now on that sentiment, let's bring it back to those that don't yet know to regret aging:  children.  They are so good at living presently, cheering at every "big" thing they get to do!  Seeing every passing growth as achievement, they don't regret the perceived "loss".  It was my son's 4th birthday over the weekend.  Of course we all want to celebrate with him and are excited to do so, though I am less excited about typical birthday fare.  So here's how we adapt:  with digestively bioavailable, rich, delicious and melt in your mouth goodness without the sugar rush and regret afterwards.  

Best yet, anyone can enjoy them, those that are happy with their birthdays and those that are not.

"Chocolate" Birthday Cupcakes

1/2 c gf sourdough starter  (here's why we use it, besides the fact that it makes them super mouthmelting, moist and healthy)

1 1/2 c gluten free flour blend

1/2 c coconut milk

Mix.  

Then add 1/4 c coconut oil and 1/4 c melted butter (or use all coconut oil)

Add 1/2 c carob powder

2 Tsp vanilla

3/4 Cup honey or xylitol

2 eggs

1/2 tsp baking powder

1/2 tsp baking soda

dash salt

Fill muffin cups 3/4 full.  Bake at 375 15-20 minutes.  Makes 9
