Gut Healthy Protein Pancakes

Love pancakes but not the bloat and sugar rush?

My little guy says these are "The best pancakes I've ever had."

We like them with banana slices and sunbutter.  Let me know what you like to eat then with once you give them a try!


1 egg

2 egg yolks

1/4c homemade yogurt

1 c coconut milk

1 tbsp honey

2 tsp soda

1 tsp apple cider vinegar 

1 tbsp olive oil

2Tbap flaxmeal

1 scoop plain pea protein

Mix all together.

Add up to 1 c gluten free flour, add slowly to get to the consistency you like. Half my family like them flat, half like them with a little more flour and fluffy!
