Poppyseed Salad

Simple lunches are my FAVE!

They take no time at all, they are delicious, I'm not spending an abundance of time in my kitchen over the stove or sink, and when I follow Fresh Fridge Formulas for Fast Food, it's super fast and easy because it's already ready for me!

Plus, I feel lean and full of energy after eating it.

So my fave lunch for today....

Poppyseed Salad

1 cup cauliflower, broken into small pieces

1/2 c carrots, I "matchstick" mine in the food processor

1/2 c shredded purple cabbage

1/4 c kale, torn into small bite size ruffles

1/4 c sunflower or pumpkin seeds(which are super high in protein!)

2 Tsp poppyseeds mixed with healthy italian dressing or drizzle healthy poppyseed dressing over top

The secret is in the sauce until you learn to love the flavor of fresh veg, so pick one you love!
