Soup Season Begins

Chicken potato artichoke chowder

I love soup weather! And here is my first installment for the season! I had some leftover chicken and artichoke I wanted to use up plus I've been in a real crave for Real Simple food. Yummy foods that take pretty basic ingredients. There's nothing more basic than potatoes so that was the start of this yummy meal.

3 medium-size potatoes peeled and diced

small onion diced

2 carrots sliced

3 cloves garlic chopped

Saute this all together in 2 tablespoons of butter or coconut oil until browned and slightly tender . Toss in

2 tablespoons coconut flour

1 cup of beef broth

2 cups of chicken broth and

one cup of coconut cream

add in one tablespoon of parsley a teaspoon of salt and a dash of pepper cover and simmer until potatoes are tender
