Sweet Breakfast Crepes Without Sugar

(My picture is a little dark, I'll have to re-make these at some point, but you get the idea. )

Keto friendly, Gluten free, grain free, whole clean real food!

These breakfast crepes are simple and oh so tasty.  

4 eggs, beaten

1 tsp vanilla

2 tbsp coconut flour

dash salt

Beat all ingredients together.  

I use a griddle, with a dollop of butter or coconut oil to lubricate the pan. I simply pour 1/2 cup of the very thin batter onto a warm griddle.  You only fry on ONE SIDE.  When it's done, the crepe will be dry on top.  Mine pictured are a bit dark, I should have fried at a lower temperature.  

Once the crepe looks dry, you scoot it onto a plate.

Fill the middle of the crepe with greek yogurt ( I used strawberry), and sliced bananas, strawberries, raspberries, and blueberries.  

Then roll up both sides, and roll so the seam side is down.
