Sweet Potato Quesadillas

Sweet potato quesadillas
Quesadillas are such a tasty and fast way to make a meal everyone loves because they can be customized!  So my meat eaters get along with my plant eaters and I don't have to make 2 meals! This recipe is the way I like it sans meat and cheese.
Food Fx:
Congestor function:  corn tortilla and sweet potato
Builder function:  beans
Make it Eliminative by serving it on a bed of spinach with avocado(also lubricator), red pepper, raw onion, green pepper, olives, anything you like!

1/2 medium purple onion
1 sweet potato, peeled and cubed
3Tbps sunflower oil
1/2 c water
salt and pepper to taste
1 tsp chili powder
1 tsp paprika
Fry covered until sweet potato is tender.
Place a tsp of oil onto griddle, and lay 6 corn tortillas on to fry.
Place a spoonful of sweet potato mixture onto each tortilla followed by a spoonful of black beans, and a spoonful of salsa.
Serve with the veggies and you are set!
