Citrus Breakfast Bowl

Citrus Breakfast Bowl

1 mango, skinned and diced

1 nectarine or peach, diced

1 banana, sliced

1 spear of pineapple, diced

2 Tbsp oj concentrate, or 1/4 c squeeze of fresh orange

2 Tbsp chia seeds

2 mint leaves, fresh from the garden and chopped

 

Add all fruits and stir until the OJ has been well combined.  

Add chia seeds and mint leaves.

Makes approx 4 servings.

This is awesome to make ahead and grab and go as a quick nutritious breakfast or protein rich snack throughout the day.

I use mason jars with lids, which makes it easy to prepare, refrigerate, and then grab and go.

Vanilla Chia Pudding

1/4 c chia seeds

1 cup almond milk, coconut milk, or other

1/2 tsp vanilla

1 tsp cinnamon

3 frozen strawberries ( can use fresh raw strawberries, I use frozen because it makes it thicker)

It's still hard for me to look at this picture and remember that it's something healthy for me.  My brain has been trained to see what looks like sweet gooey confections and automatically register the sugar before it even touches my tongue.  But then I remember that this cookie dough that you can eat by the spoon and not feel  guilty about is VEGAN!  DAIRY FREE!  REFINED SUGAR FREE!  GRAIN FREE!

And better yet..is filled with protein, free of allergens, and is a REAL fat bomb(with healthy fats, not those ridiculous fat bombs you see posted for Keto diets containing...
