Chicken potato artichoke chowder
I love soup weather! And here is my first installment for the season! I had some leftover chicken and artichoke I wanted to use up plus I've been in a real crave for Real Simple food. Yummy foods that take pretty basic ingredients. There's nothing more basic than potatoes so that was the start of this yummy meal.
3 medium-size potatoes peeled and diced
small onion diced
2 carrots sliced
3 cloves garlic chopped
Saute this all together in 2 tablespoons of butter or coconut oil until browned and slightly tender . Toss in
2 tablespoons coconut flour
I've been kind of obsessed with this recipe lately. It's the same base but I've been playing around with it making it a little new each day. And I love how this one turned out. It is the perfect complement as the weather is turning colder and I see the leaves turning around me and all of the gardening and canning I am doing.

Growing up my mom used to make us something she called "macho nachos", which was weird, because there weren't any nachos at all!
